This Republic day presenting you delicious Tri colour desert, Carrot and Pumpkin Halwa with Ice Cream.
The combination of hot halwa’s and the ice cream is marvellous.
In this recipe of making Carrot Halwa and pumpkin halwa, I have added Chenna.
Chenna is made by cuddled milk.
Boil the milk till it reduces the quantity, keep stirring in between
Add the vinegar and continue stirring, the milk starts to cuddle and separate from the whey. Drain it. The whey water can be used to knead the dough.
Wash the drained Chena in the water again
Chenna gives a rich taste to the halwa.

Ingredients
- For Carrot Halwa
1/2 kg carrot
1/2 cup chena
1 cup sugar (you can add more if you want it sweeter)
1 pinch salt
1 cup milk
1/4 tsp cardamom powder
Little Cashewnuts and raisins
- For Pumpkin Halwa
1 small white Ash pumpkin
3/4 cup sugar
1/2 cup chena
1/4 tsp cardamom powder
Little cashew nuts and raisins
- Ice Cream
Vanilla Ice cream OR tender coconut ice cream OR any ice cream of your preference.
Directions
- Carrot Halwa
- Clean the carrots. Peel the outer skin, wash and grate it.
- In a non-stick pan dry fry the grated carrot.
- Add 1/4 cup water and cook for 5 mins.
- Add 1 cup milk and continue cooking.
- Till the milk is completely absorbed, keep stirring the Halwa without stopping as it may get burnt.
- Add ghee, cardamom powder and nuts.
- One you feel the Halwa get sticky and leave the sides of the vessel. Consider it’s done.
- Making Pumpkin Halwa
- Clean and cut the pumpkin into stripes
- Peel out the skin and also remove the core sead part.
- Grate the pumpkin with grater.
- Cook in the cooker for 1 whistle and discard the water.
- In a non-stick, pan add Sugar grated pumpkin chena and cook till the mixture starts to get sticky.
- Add ghee cardamom powder and nuts.

- In a dessert bowl arrange carrot halwa and pumpkin halwa and place Ice cream at the centre.
