Here in Reshmi chicken masala, chicken is cooked with non-spicy rich thick masala made of almonds, cashew nuts, yogurt and with herbs and spices. The tender juicy chicken just melts in your mouth.

Ingredients

  • For marination:-
  • 1kg chicken pieces

  • Half cup of Hung curd

  • 1 tsp Pepper powder

  • 1 tbsp Ginger garlic paste

  • 1 Tsp Kasuri methi

  • 1 tbsp cornflour

  • 4 chopped green chillies

  • 2 tsp salt

  • 2 tsp fresh cream

  • 3 tbsp of chopped coriander leaves

  • 1 tbsp of lemon juice

  • Mix all these ingredients nicely and keep aside for two hours

  • For grinding masala:-
  • 2 medium onions

  • 20 Cashews

  • 5-6 Almonds ( skin peeled. Optional)

  • 1 inch Ginger

  • 5 Garlic cloves

  • 5 Green chillies

  • 1 tbsp Coriander powder

  • 1 tsp Jeera powder

  • 1 tsp Turmeric powder

Directions

  • Heat 1 tbsp of oil. Add chopped onions, ginger, garlic, green chillies and cashews all together. Saute it till onion turn transparent. Let it cool.
  • Grind it with coriander, jeera and turmeric powder.
  • Heat a non-stick pan. Add 2 tbsp of ghee and add a small stick of cinnamon, 5 cloves, 4 green cardamom, and two bay leaves. Fry a while and add ground masala..fry it for 2 minutes.
  • Now add marinated chicken..mix it with masala..do not add extra water…cook it on a medium flame. Close the lid but make sure that it shouldn’t burn. It will take 12 to 15 minutes to cook.
  • You can add salt if needed. Now add 2 tsp garam masala powder, 1tsp Kasuri methi, chopped coriander leaves 2 tsp fresh cream and 3 tsp lemon juice. Mix it for one minute. OFF the flame.
  • The Reshmi chicken masala ready. Garnish with chopped coriander leaves.
  • Neer dosa (panpole) is the best combination with this delicacy.

Notes

  • If we use burning charcoal ghee tadka to the marinated chicken…it enhances the aroma of chicken.
