Have you seen sometimes, Idli and sambar served separately in a plate and bowl or idlies dipped in the sambar?. This combination is called the way it is served. When Idli and sambar are served separately it’s called “idli-sambar” and when the idlies are served dipped in the sambar it’s called “sambar-idli”.

Idlies are made with rice fermented with pulses/dal. It is low in calory, high in protien. Since it is steamed no oil is used and fermentation helps in easy digestion.

- Ingredients for sambar powder (No.1)
5-6 Red chillies
3 tbsp Coriander
1 Tsp Jeera
1/2 Tsp Mustard
1/2 Tsp Methi
1 Tsp Channa Dal
1 Tsp Urad Dal
1 Tsp Moog Dal
1 Tsp Rice
3 springs Curry leaves
1/2 tsp turmeric powder
- Vegitables and Dhal ingredients (No.2)
1/2 cup Toor Dal
2 Tblsp Moong Dal
1/4 kg mixed Vegetable of carrot, beans, capsicum, potatoes
2 Green chillies
1 inch Ginger
6 Bimbli or half lemon sized Tamarind (gives sour taste, tamarind can be used instead). Bimbli in the picture below,
Salt as per taste
- Ingredients for Seasoning
1 spring Curry leaves
1/2 tsp Mustard
1/2 tsp Hing
4 Crushed garlic
- Soak Dhal for 2 hours. (Vegetables and Dhal mentioned in ingredients No.2)
- Fry the ingredients (Ingredients for sambar powder No.1) in oil add turmeric powder and grind to a fine powder.
- Add chopped vegetable and soaked dhal and cook for 2 whistles.
- Add Sambar powder and cook for some time.
- Season with curry leaves, mustard, Hing and crushed garlic.
